不知道早餐要吃什麼嗎?還是不知道小孩的下午點心要給他們吃什麼好嗎?試試這個義大利式的Mini Frittatas (迷你火腿蛋塔) 吧,簡單易做,健康美味,而且從頭到尾大概半小時就做好,還可以讓小朋友一起參與製作過程,保證他們會把自己做的東西吃光光喔。以下食譜取自Everyday Italian節目,以下材料份量可以做40個迷你蛋塔,如果用一般尺寸的muffin模型,裝八分滿大概可以做9個。
Nonstick vegetable oil cooking spray
2 mini muffin tins (each with 24 cups)
8 large eggs
1/2 cup whole milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
4 ounces thinly sliced ham, chopped (亦可用Salame、火雞片)
1/3 cup freshly grated Parmesan
2 tablespoons chopped fresh Italian parsley leaves
Preheat the oven to 375 degrees F. Spray 2 mini muffin tins with nonstick spray.
Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.
