[Sunnyvale] Sawa – Best Omakase Restaurant

From Wikipidea – Omakase (お任せ) is a Japanese phrase that means "I'll leave it to you" (全權由主廚決定). The expression is used at sushi restaurants to leave the selection to the chef.  The chef will generally present a series of plates, beginning with the lightest fare and proceeding to heaviest, richest dishes. . . Customers ordering omakase style expect the chef to be innovative and surprising in the selection of dishes, and the meal can be likened to an artistic performance by the chef. Ordering omakase can be a gamble; however, the customer typically receives the highest quality fish the restaurant currently has in stock.

和幾對夫妻朋友前往Sunnyvale的Sawa朝聖, 因為在Yelp上面幾乎都是五顆星的狀態, 據說是灣區最好的Omakase餐廳. 我沒去過別的Omakase餐廳, 所以無法比較品質或是價格, 不過很慶幸第一次 "讓主廚全權處理"的經驗不錯, 但是整個經驗的一開始卻不太好.

按照GPS來到這個鳥不生蛋的停車場後發現, 怎麼它的旁邊不是Subway, 就是State Farm, 而且窗戶都拉下窗簾, 完全看不到裡面, 也沒有Open的霓虹燈. 一推門才發現是鎖着的, 日本老闆出來馬上問, "有沒有訂位? 沒訂位不收客." 哇-咧!! 

告知有訂位後, 老闆才開門讓我們進去. 大家坐下後, 老闆來問要不要喝Sake. 當下我們幾位朋友正機哩瓜拉聊, 老闆居然敲桌子, 要我們安靜下來聽他講話. 靠!!! 我當下臉上出現三條線, 心裡想, 這個晚餐可能很難過了.

第一次吃到新鮮干貝可以這麼單純美味, 味道淺淺淡淡, 干貝入口即化, 果真小盤大風味. (一人一盤)

上面略灑顆粒鹽, 盤中間有新鮮檸檬汁可以略沾, 味道好清新爽口, 咕嚕二下就下肚囉. (四人一盤)

芒果和鱷梨在上, 忘了下面是什麼魚, 芒果熟的剛好又香, 非常甜美爽口, 我看我可以吃下好幾盤. (一人一盤)

Fatty Tuna with Uni.  這是我第一次吃Uni, 口感好像Crème Brûlée去掉表層Sugar custard的感覺, 綿密細緻, 入口即化. (一人一盤)

大家吃的不過癮, 結果老闆又上了一盤給整桌人分享. Uni with fresh wasami. 新鮮的wasami一點都不嗆鼻, 好吃的很.

Chef's specialty – 可我怎麼覺得不特別, 也有可能我們已經蠻飽了. 我還希望他沒上這道, 因為到鮭魚那盤為止都很完美, 上了這道反而破壞了整體感受.  (四人一盤)

這瓶Dessert Sake可好喝了, 冰涼順口, 7% 酒精濃度, 不小心可能半瓶就沒了.

註二: 根據Opinionated About的記載, Sawa是全美國2012排名第74名最好的餐廳. (Top100裡, 有19間在北加州, Los Gatos的Manresa排名第一, The French Laundry排第二)

  1. 請問這樣一餐的預算大概是多少? 久聞Sawa 想要嘗試 但聽說Chef很機車 有點怕怕 (怕不太懂吃前檯的規矩 而被老闆白眼)

  2. For Omakase in Southbay, I would recommend “Hachi-Ju-Hachi” in Saratoga.
    Make reservation and make sure to sit at the counter near the chef if possible.
    Suzuki San was originally head chef of “Hamon Washoku” in San Carlos, but Hamon had closed down since.
    This restaurant serve traditional Japanese Osaka Style cuisine. Everything serve in Hachi-Ju-Hachi are painstakingly handmade even as simple as the salt they use.
    Osaka cuisine tend to be on the lighter side starting from the dashi stock they made.
    If you are interested to try true authentic Japanese cuisine, Hachi-Ju-Hachi is someplace I highly recommended. Japanese tea sensei often goes there.
    Two of the training chef are from taiwan… that is if they are still there since the last time I visited.
    Omakase if I recalled started at $150 per person not including alcohol.

    生魚片和海膽看起來都不錯,但是甜點那個麻糬冰淇淋會不會太陽春了啊~~

    Sawa的網站上有價錢
    基本上不含酒的話
    最基本的六道菜從$95起跳
    然後有九道, 十二道, 二十五道的選擇
    你可以先從六道開始
    吃不過癮可以再加
    我不知道這樣的價錢算高還是算低
    因為這是我第一次吃Omakase的方式
    食材真的非常新鮮
    味道也真的挺讚的
    除了最後那盤魚和冰淇淋
    Chef是挺有個性的
    建議你一坐下不要開始聊天
    做個乖寶寶
    讓Chef把正事先辦 (點酒或茶, 有沒有什麼不吃)
    等他回廚房準備餐點後
    你們在開始聊

    那我也要去買幾瓶回來冰
    對啊
    我也覺得那個麻糬冰淇淋很遜色
    那還不如給我一球抹茶冰淇淋算了
    我在別家日本餐廳有吃過類似Panna cotta的甜點
    簡單點綴就很美麗
    我覺得比較配咧
