IACP Conference in SF – Day 2

今天早上七點半就到凱悅飯店參加Food Photographers and Stylists Breakfast Mixer, 選擇哪張桌子坐下,真的就像Speed Dating一樣緊張刺激.

八點半參加由Maxime Bilet (Co-author of Modernist Cuisine), Thomas Keller (Chef of The Franch Laundry, PerSe, Bouchon, Ad hoc), and Peter Kaminsky (Author of Culinary Intelligence, The Elements of Taste, Pig Perfect, etc)一同主持的Plenary: Examining the Divide between DIRT and DIGITAL.  我覺得這場座談會比較適合大廚們, 因為討論的主題和角度, 還真不是我這外行人可以瞭解的.

十點半參加由Enid Hwang (Pinterest), Colby Grab (Allrecipes.com), Irvin Lin (EatTheLove.com), Allison Long Lowery (CookingLight.com), and Katie Parker (BHG.com)一同主持的Food and the Power of Pinterest.  各個雜誌的主編和部落格主和大家分享如何使用Pintrest做為市場行銷的工具.

接著就是去中午才開始的Culinary EXPO, Book, and Blog Festival.  是在不同地方, 所以搭接駁巴士前往, 去了之後很失望, 因為展示的攤販很少, 多數的食譜作者僅只是把書放在桌面上, 沒見到人, 更別提部落格主了.  其實以這樣的小型規模, 其實可以在凱悅辦就好, 還省得我們跑一趟. 不過, 從那些為數不多的Vendors當中, 我還試吃到幾個不錯的:

Oakland的Sugar Knife 透過Kickstarter募款(那個自我推薦的片子實在有點…), 在去年底得到二萬塊的贊助, 請了專業攝影師拍攝後, 網站果然美麗多了 – 我不是很愛甜食的人, 對Marshmallows或Brittle也沒有太大的興趣, 一直到我嚐到Sugar Knife手工, 少量, 做的Marshmallows和Brittle, 讓我非常驚訝自己居然會喜歡到寫文推薦. 我吃了Cookies & C.R.E.A.M. Marshmallows, The Big Poppa Beer Brittle, and The Filthy Pig Whsikey Brittle, 而這個順序也剛好是我給分的順序, 有打算來訂個Gift Box, 裡面有四或六包不同口味的Marshmallows, 住南灣的朋友, 有沒有人要跟我分啊?

Tucson的Euforia -這是一位印尼女兒, 為了記住她和母親一起做千層糕的回憶, 在2011年開始這個all-natural ingredients and all gluten free手工製作的千層糕. 我試吃的是Triple Delight Cake, 很不錯, 拿到一個30%折扣碼, 但要在四月底前訂購完成, 有人想一起訂購嗎?

加拿大的Lentils – 我很難想象我當時吃到的是Lentil Waffle, 也不知道加拿大是世界上最大的Lentils出口國. Lentil很營養健康, high in fiber and complex carbohydrates, low in fat
and calories, and are naturally gluten-free. Their exceptionally low glycemic index
(low GI) values and resistant starch content make them suitable for a
diabetic diet. Even better, the high protein content makes lentils a
perfect option for vegetarians or active people who would like to boost
their protein intake.

另外, 昨天去的那個攝影棚有準備鼎鼎有名的Tartine Bakery & Cafe的麵包, 當中我選了牛角麵包, 果真名不虛傳, 是我吃過最好吃的Croissant, 外表酥脆, 裡面鬆軟有彈性. 我在網路上找到食譜, 看起來好像很複雜, 要來研究一下, 這樣就省下跑舊金山的麻煩.

    Thank you so much for sharing the valuable info you acquired from attending the IACP conference!
    I have recently been on gluten-free diet due to health concerns. I’ve been looking everywhere for GF baked goods and desserts. I’d definitely like to try Euforia and Lentils.

    應該也不少
    因為Gluten-free是近幾年在美國烹飪界很紅的主題
