For noodles:
2 small courgettes/zucchini
1/3 cup pitted black olives, chopped (我不喜歡橄欖, 所以我沒放)
For Sauce:
1/3 cup sun-dried tomatoes, soak in cold water for 10 min.
1 cup cherry tomatoes
1 garlic clove, crushed
1 tb dried oregano
1 tb dried basil
a pinch of ground cayenne pepper
2 TB extra virgin olive oil
salt and freshly ground black pepper
做法超簡單, 先把zucchini切對半, 放進Spiralizer, 用最細的刀片出來的就類似Angel Hair麵.
然後把醬料類的材料放進Food Processor (橄欖油的份量自行斟酌, 覺得醬太稠就多加一點油), 然後倒在蔬菜麵上就可以吃了 (愛吃橄欖的人就這時候放上去).
應該沒有比這個更簡單的義大利麵了, 而且味道不錯. 嫌單薄的人也可以自行炒些香菇絞肉等等外加上去, 這個是全素版.
